Things I Like To Do On Mondays

I like to take a little time on Monday morning to do a little prep work for the week ahead.

Lately, since we eat so many eggs and they are cheap, I've been boiling a dozen at the beginning of every week. A dozen usually gets us pretty close to through the week when eaten plain, as deviled eggs or as egg salad for lunch or snacks. 

Veggies take a bit of time to prepare for each meal so I like to grab an assortment out of the crisper and chop them up so they're ready. This doesn't usually last us a whole week but gives me a head start.

I've also been washing a head or two of lettuce  to have ready. Depending on the week's menu, I leave some leaves whole for lettuce wraps and chop some for salads.

These small steps make mealtimes a bit easier!

That's a great idea to boil a dozen at the beginning of the week! I am all about veggie prep, and I normally boil a few eggs. This idea will be very helpful. :) Thank you!

very good ideas~
way back when I had 4 children at home and was also employed, I would peel several pounds of carrots and even more pounds of potatoes, then they would get stored in big jars of water in the fridge.
So we had veggies all week for stew or shepherds pie or whatever.

This is a great idea, Mary Ann. I think it would help me to incorporate more veggies into our snacks and meals if I just took a bit of time to prep them in bulk, rather than scrambling at the last minute. Thanks for the inspiration! Gotta love this time of year with all the fresh produce stands around!

This method makes serving salads a whole lot easier! If I wait to cut veggies up, I will often get too lazy and either grab something else or not serve them at all. Lunch is a particularly hectic time at our house and having a few things like this ready to pull out and set on the table helps tremendously!
