Menu Plan Monday


A menu plan hasn't been posted here in quite a while! While I've still been planning meals, I haven't been quite as intentional as I would like. So I'm getting back into it!

Breakfasts:
*Scrambled eggs. (5x)
*Hard boiled eggs, cheese, ham.
*Breakfast in a hurry made with sausage instead of bacon.

Lunches:
*Leftovers. (2x)
*Lentil soup, veggies and onion and chive cream cheese dip.
*Hot dogs, veggies.
*Beef jerky, cheese, vegges/dip, hard-boiled eggs. (2x)
*Eat out.

Snacks:
*Yogurt, bananas with peanut butter.
*Applesauce, bananas.
*Apples with peanut butter.
*Fruit smoothies.
*Apples, nuts.
*Rice chips, cheese.

Suppers:
*Shepherd's Pie  made with eggplant, green beans, celery, onion, peppers and mushrooms and topped with mashed butternut squash. Based on a new recipe from The Enchanted Broccoli Forest cookbook.

*Chicken and veggies (crockpot), sweet potatoes.

*Salmon patties, rice, stir-fry veggies.

*Grilled steaks, mashed butternut squash, salad.

*BBQ meatballs (crockpot), brown rice, salad.

*Eat at church meetings 2x where we take something to share.

How refreshing to see something low grain! I call our eating style "primalish", but I like low grain better.

The breakfast in a hurry looks like something I just saw and will have to try out!

Liked your menus; I think it really does help to put them down on paper to help plan the week out. That eggplant recipe looked interesting, might have to try it!

Its just me and my hubby these days since kids are grown so I don't plan breakfast or lunch, we have enough stuff to make things, but here's dinner menus for the week:

Sunday: chicken soup
Monday: chicken/rice casserole in crockpot
Tuesday: leftover chicken soupo
Wednesday: TV dinners/salad (hubby works Wednesday nights so we plan quick dinner)
Thursday: leftover chicken/rice casserole.
Friday: Chicken salad sandwiches, french fries.
Saturday: Pizza.

Molly Katzen's books are THE best, aren't they...I have had her Moosewood cookbook for probably 30 + years and her children's cook book too!! I have asked for the Enchanted Broccoli Forest for YEARS and have not gotten it yet!!!!! So glad you know about her and are introducing her and her cooking to your family and friends!!
